Ingredients:
1 (12oz) pkg. of turkey kielbasa, sliced
1lb ground turkey breast or ground chicken breast
1 onion, diced
2 celery stalks, sliced
½ of each, sliced and diced: red pepper, green pepper, yellow pepper
1 pkg. taco seasoning
3 (16oz) cans great northern beans (1 undrained, 2 drained)
1 (16oz) can fat-free refried beans (regular or spicy your choice)
1 ½ cups of chicken broth
1 (4.5 oz) can chopped green chiles
a few dashes of hot sauce to your own taste
Directions:
1.Chopi/dice all your veggies and slice your kielbasa.
2.Preheat large pot with some olive oil (about at teaspoon or two) on medium-high for about 2-3 minutes. Add turkey/chicken. When turkey/chicken is cooked about half way (make sure to really break apart the meat as it cooks), add the kielbasa, veggies, and garlic. This will take about 10-12 minutes to cook the meat completely and for the veggies to be crisp tender.
3.Stiri in the taco seasoning mix; cook and cover for 1 minute. Stir in the broth and refried beans. Stir until the refried beans are really well blended with the broth (about 1-2 minutes). Stir in the remaining ingredients; cover and bring to a boil. Reducei heat to medium and cook for 20-30 minutes, stirring occasionally. If you would like your chili to be even thicker, after the 20-30 minutes, reduce the heat to low and cook an additional 10 minutes. The chili will thicken, however, once it starts to cool a bit in your bowl.
4.Serve with your favorite toppings: chopped onions, sour cream, salsa, Mexican cheese blend. Serve with some warm cornbread and an ICE COLD beer! (or Ice Teai for the sub-21 folks!)
